Tassel Ridge 2008 Iowa St. Croix Receives Enthusiastic Acclaim

2008 Iowa St. Croix was released just a few months ago and most people trying it for the first time are enthusiastic about its well-integrated tannins, dark fruit notes, and baking spices on the palate. The fruit for this dry red wine was all grown in our Mahaska County vineyards. We pick St. Croix early when its flavor profile is at its best. After the alcoholic fermentation is complete, we start a malo-lactic fermentation which softens the fruit characteristics and improves the mouth-feel of the wine. Then, the St. Croix is aged in stainless tanks in contact with oak beans for about a year. Some of the St. Croix is aged in oak barrels and is later blended with the wine aged in stainless tanks. Our 2008 Iowa St. Croix spent nearly 18 months ageing before it was bottled in spring 2010.

Like most dry red wines, 2008 Iowa St. Croix is best when paired with flavorful foods like beef, spicy chicken, and pastas with spicy tomato-based (red) sauces.

2008 Iowa St. Croix is different from some red wines in that it needs to be briefly exposed to the air in order to open up and show off its nuanced flavors. One can use a Vinturi to aerate the 2008 Iowa St. Croix, but the best results come by vigorously pouring the 2008 Iowa St. Croix into a decanter and then letting it sit for 30 minutes before serving. Of course, it should be served at room temperature and should not be refrigerated.
