Tassel Ridge® Balsamic Glazed Pork Chops with Fresh Peach Salsa

Ingredients

  • 2 ripe peaches peeled and small diced
  • ½ red pepper seeded and finely diced
  • 1 jalapeño seeded and finely diced
  • 1 Tbsp finely chopped red onion
  • 2 tsp chopped fresh cilantro
  • 1 Tbsp lime juice
  • 2 tsp rice wine vinegar
  • ½ tsp packed brown sugar
  • cup balsamic vinegar
  • cup canola oil
  • 3 Tbsp honey
  • 1 Tbsp chopped fresh basil
  • 1 clove garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 bone-in pork chops about 1-inch thick

Instructions

  1. Combine peaches, red pepper, jalapeño, onion, cilantro, lime juice, rice wine vinegar, and brown sugar in large bowl. Mix well. Refrigerate until ready to serve. Meanwhile, combine balsamic vinegar, oil, honey, basil, garlic, salt, and black pepper in another bowl. Place chops in zip bag. Pour balsamic vinegar marinade over chops. Refrigerate about 2 hours. Preheat grill on medium heat. Remove chops from marinade. Grill 7 minutes. Turn and grill another 7 minutes (or until internal temperature reaches 145°F). Remove from grill. Top with peach salsa. Serves 4.
