Tassel Ridge® Chinese Chicken Salad

¼ cup soy sauce
¼ cup tahini, well stirred
¼ cup rice vinegar
1 tsp minced garlic
1 Tbsp of minced ginger
1½ tsp salt
½ tsp black pepper
1 Tbsp sesame oil
½ cup canola oil
2 tsp black sesame seeds
5 oz shredded cabbage
¼ cup snow peas, trimmed and thinly sliced lengthwise
1 carrot, julienned
½ medium cucumber, peeled, seeded, and chopped into bite size pieces
2 green onions, sliced on sharp angle
1 Tbsp fresh cilantro
2 cups cooked chicken, shredded
1 11-oz can of mandarin oranges, drained
¼ cup slivered almonds, toasted

Combine soy sauce, tahini, vinegar, garlic, ginger, salt, and pepper in blender. Blend until smooth. Slowly drizzle in sesame oil and canola oil. Blend until mixture begins to thicken. Turn off blender. Add sesame seeds and pulse twice. Set mixture aside. Combine cabbage, snow peas, carrots, cucumbers, green onions, and cilantro in large bowl. Drizzle with soy sauce mixture. Toss until mixed. Spilt evenly between two plates. Top with chicken, oranges, and almonds. Serves 2.
