Tassel Ridge® White Wine and Orange Granita

Ingredients:
6 navel oranges
3 cups orange juice
2 cups Tassel Ridge Prelude
¾ cup sugar
3 drops orange extract, optional
fresh mint leaves for garnish

Directions:
Cut 2-inch slice from stem end of oranges. Using a spoon, scoop flesh out of oranges over a bowl, reserving juice. Place hollowed-out oranges on tray. Freeze until ready to use. Whisk reserved juice from oranges, 3 cups orange juice, Tassel Ridge Prelude, sugar, and orange extract until dissolved. Pour into 2-quart square glass baking dish. Cover. Freeze until completely frozen, about 3 hours, using a fork to stir and break up ice every hour. Before serving, break up with fork and stir until light and fluffy. Spoon into oranges. Garnish with mint. Serve immediately. Serves 6.

Wine Recommendation: Tassel Ridge Prelude

This recipe for Granita is all about fruit, and the wine in it needs to complement the citrus in the recipe. Tassel Ridge Prelude is the perfect match. A semi-sweet white wine with citrus, pear, nectarine, banana, and tropical fruit notes, Prelude is made from St. Pepin grapes grown in our Mahaska County, Iowa, vineyards and Muscat grapes.—Bob Wersen, Owner, Tassel Ridge Winery
