We bottled the 2016 Iowa Edelweiss last Wednesday. The machinery did not cooperate this time and while we got the job done, it was an ordeal. Everyone is pleased that the wine is outstanding!
The cellar team filtered the 2016 Iowa Brianna after cold stabilization. We will add sugar and filter again before bottling this wine on Wednesday, December 14.
We did some fining work on the 2016 Iowa La Crescent. We also stopped the fermentation on the 2016 Iowa Prairie Snow® by turning the tank temperature down. In about ten days, we will rack this wine to a different tank. So far, this wine has a beautiful aroma.
For the foreseeable future, the cellar activities will include sugar adjustments, filtering, bottling, and more bottling!
