Fining wines can be a slow process and patience is a virtue. We are working on 10–15 wines right now and are generally waiting for them to settle. Our objective is to get clarity in the wine. Generally, the good news is that there doesn’t seem to be any off-flavors or aromas in any of the wines so what is settling out is protein. We need to remove the proteinaceous solids in order to achieve heat stability. Otherwise, if the wine gets warm, it will throw a haze that is not appetizing.
This is also the time of year that we get our waste water treatment ponds pumped down for the winter. The treated waste water is sprayed onto our landscaping in a controlled manner. As soon as it freezes, we will pull our air pumps from the lagoons and store them for the winter.
