On Monday, we received about 3,000 gallons of Muscat juice we purchased in Mendocino Country, California. We started the fermentation today. We are getting ready to carbonate our Oskyfizzante Cranberry and will bottle that next week. We have six tanks of Edelweiss and this week will be racking three of those tanks off yeast lees. We have fermentations of Sabrevois and Steuben going and will continue to monitor them. And, we are setting dates for future bottling sessions.
