Tassel Ridge® Finalé Raspberry Hot Chocolate

Ing
redients:
2 cups milk
3 tsp unsweetened dark cocoa powder
4 tsp sugar
pinch salt
2 Tbsp Tassel Ridge Finalé Raspberry
Marshmallows for garnish

Directions:
Combine milk, cocoa powder, sugar, and salt in saucepan, stir well. Heat until just warm, whisking occasionally (do not simmer or boil as mixture will curdle). Add Tassel Ridge Finalé Raspberry and stir to combine. Pour into cups. Garnish with marshmallows. Serves 2.

Tassel Ridge® Asian Chicken Sliders

Ingredients:
⅓ cup sweet chili sauce
1½ cups soy sauce
¼ cup sesame oil
3 cloves garlic
2 Tbsp lime juice
1 cup orange juice
½ bunch cilantro
½ cup rice vinegar
2 Tbsp fresh ginger, cut into pieces
4 boneless, skinless chicken breasts, cut into 3 pieces against the grain and pounded to ¼ inch
1 seedless cucumber, julienned
2 carrots, julienned
1 fresh jalapeño, thinly sliced
12 slider buns, toasted

Directions:
Combine chili sauce, soy sauce, oil, garlic, lime juice, orange juice, cilantro, vinegar, and ginger in food processor and blend until garlic and ginger pieces are small. Place about ¾ of sauce into plastic zipper bag. Add chicken pieces. Refrigerate overnight. Refrigerate remaining sauce in small bowl. Preheat grill. Remove chicken from sauce and discard sauce. Grill for 3 to 4 minutes. Turn and grill another 3 to 4 minutes or until no longer pink (internal temperature should 165°F). While chicken is cooking, combine cucumber, carrots, and jalapeño in bowl with reserved sauce. Place chicken piece on each bun and top with cucumber-carrot mixture. Serves 6.

Tassel Ridge® Bacon Cheddar Sliders 

Ingredients:
2 lbs ground beef
6 oz bacon, chopped
6 oz shredded Cheddar cheese|
2 tsp black pepper
15 lettuce leaves
15 Roma tomato slices
15 slider buns

Directions:
Mix beef, bacon, cheese, and pepper together in bowl. Shape into 15 2-inch burgers. Grill over medium-high heat 2 to 3 minutes per side until burgers are cooked through (internal temperature should reach 160°F). Place burgers on buns. Top with lettuce and tomato. Serves 5–7.

Tassel Ridge® Tortilla Bruschetta Pinwheels 

Ingredients:
6 tomatoes, diced
½ red onion, diced
2 cloves garlic, minced
1 Tbsp olive oil
3 large flour tortillas
1 cup Parmesan cheese
12 basil leaves, thinly sliced

Combine tomatoes, onion, garlic, and olive oil in bowl. Spread ⅓ of tomato mixture evenly over a tortilla. Sprinkle with cheese and basil. Roll tortilla tightly. Repeat with remaining tortillas. Cut tortilla rolls into 2-inch pieces. Serves 5–7.

Tassel Ridge® Iowa White Blossom Queso Dip

Ingredients:
12 oz aged Gouda cheese, grated
12 oz Fontina cheese, grated
2 Tbsp cornstarch
1 cup milk
1½ cups Tassel Ridge Iowa White Blossom
2 garlic cloves, minced
½ red onion, diced
2 jalapeños, seeded and diced
½ green bell pepper, seeded and diced
2 tomatoes, diced
½ tsp cayenne pepper
Tortilla chips

Directions:

Put cheese in bowl and cover with cornstarch. Combine milk, wine, and garlic in saucepan. Bring to a simmer. Add cheese and melt slowly. Mix onion, jalapeño, bell pepper, tomato, and cayenne in bowl. When cheese is melted, add pepper mixture. Stir well. Serve warm with chips. Serves 6–8.
