Last week, the cellar team bottled Oskyfizzante Cranberry. This is a carbonated wine that has a rosy color in the glass and a wonderful cranberry note on the nose. The “fizzies” are bottled by hand and this is definitely not a process for the faint of heart or weak of arm. The carbonated wines can bubble up and make a mess just like a soda or champagne can, so everything (the wine, the bottles, and the cellar itself) is kept as cold as possible to reduce the possibility of making a mess. It takes a combination of Mike Tyson and an orchestra conductor to work the manual bottler. If you ever get to witness the process, you might just find yourself put to work!
