This week, we will bottle our first wine after harvest. It is our very popular Blackberry Wine. We are also racking newly fermented wine into new tanks. We pump the wine out of the top of the tank down to the point where instead of wine, we have only yeast lees. The yeast lees are dead yeast cells and grape pulp. This is dumped onto the floor and then into the trench drains which will take it to our waste water treatment ponds. The tank is then cleaned with very hot water and cleaning agents. We will also be receiving our very first shipment of bottles for the season.
