Our cellar crew has finished fermentation of a large batch of Concord and is getting ready to start some fining. It will be used as part of the blend in upcoming batches of Red, White, & Blue®.
They bottled Sweethearts Rosé on Tuesday and Rockets Glare Rosé® on Wednesday. The Rockets Glare Rosé® is very fruity and offers cherry and strawberry aromas.
The next large batch of Star Spangled White® was filtered and we will bottle this wine on January 27.
Jonita, our Cellar Specialist, is working on some new blends so stay tuned! That is the good news. The bad news is that she hasn’t had any time to enjoy some wine. Hopefully, next week she will have some good ideas.
