Tassel Ridge® Arugula Citrus Salad

Ingredients

  • 3 cups arugula
  • 2 oranges peeled and sliced
  • 12 black olives
  • ½ cup crumbled feta cheese
  • ¼ cup candied pecans
  • ¼ cup balsamic vinegar reduction or balsamic glaze
  • ¼ cup extra virgin olive oil

Instructions

  1. Spilt arugula between two plates. Top with oranges, olives, feta, and candied pecans. Drizzle with balsamic and oil. Serves 2.
