Prepare grill for indirect cooking. Preheat grill to medium. Cut 8 slits, about 1½ inches deep, in roast. Insert garlic clove into each slit. Season roast with salt and pepper, making sure to cover completely. Place roast on grill. Cook covered over indirect heat, for 45 minutes. Turn. Cook for 30 minutes, or until meat reaches desired doneness (internal temperature of 135°F for medium). Allow to rest on cutting board for 15 minutes. Slice to desired thickness. Serves 4–6.
