Tassel Ridge® Witches' Fingers Almond Cookies

Ingredients

  • 1 cup butter
  • ¾ cup sugar
  • ¼ cup almond paste
  • 1½ tsp almond extract
  • 1 tsp vanilla
  • 1 egg
  • 2⅔ cups flour
  • 1 tsp baking powder
  • 1 tsp salt
  • ¾ cup whole almonds

Instructions

  1. Preheat oven to 325°F. Spray cookie sheets lightly with non-stick cooking spray. Cream together butter, sugar, almond paste, almond extract, and vanilla in mixing bowl. Once mixture is smooth, add egg. Combine flour, baking powder, and salt in another bowl. Slowly add flour mixture to butter mixture. Mix well. Refrigerate about 20 minutes. Scoop 1 heaping teaspoon of dough onto cookie sheet. Roll into shape of a finger. Place whole almond on one end of finger. Cut 3 lines behind almond, in center of finger, to make knuckles. Repeat with remaining dough. Bake 20 minutes, or until cookies are golden brown. Cool before serving. Yield 2 dozen cookies.
