Combine Señorita mix and Tassel Ridge® Candleglow® White in bowl. Stir until mix is dissolved. Add shrimp. Stir. Set aside for 20 to 25 minutes. Preheat grill. In a bowl combine the spring mix, corn, cilantro, queso fresco, jicama, red pepper, and pico de gallo. Toss well. Drizzle dressing over salad. Toss to coat evenly. Remove shrimp from Señorita mix. Grill about three minutes. Turn. Cook about 2 minutes, or until cooked completely through. Divide the salad mixture between 2 plates. Top with shrimp. Add avocado and serve. Serves 2.
