Tassel Ridge® Señorita Marinated Grilled Shrimp Salad



  • 1 cup Wine-A-Rita Señorita mix
  • 1 cup Tassel Ridge® Candleglow® White
  • 12 large shrimp 16 to 20 per pound
  • 2 cups spring salad mix
  • ¼ cup roasted corn
  • 2 Tbsp cilantro leaves
  • ¼ cup queso fresco
  • ½ cup shredded jicama
  • ¼ red pepper julienned
  • ½ cup pico de gallo
  • ½ avocado sliced
  • Dressing (recipe below)

Dressing Ingredients:

  • ½ tsp minced garlic
  • tsp minced shallot
  • 1 jalapeño cored and seeded
  • tsp lime juice
  • tsp apple cider vinegar
  • 2 Tbsp canola oil
  • pinch cayenne pepper
  • pinch salt
  • pinch ground black pepper



  1. Combine Señorita mix and Tassel Ridge® Candleglow® White in bowl. Stir until mix is dissolved. Add shrimp. Stir. Set aside for 20 to 25 minutes. Preheat grill. In a bowl combine the spring mix, corn, cilantro, queso fresco, jicama, red pepper, and pico de gallo. Toss well. Drizzle dressing over salad. Toss to coat evenly. Remove shrimp from Señorita mix. Grill about three minutes. Turn. Cook about 2 minutes, or until cooked completely through. Divide the salad mixture between 2 plates. Top with shrimp. Add avocado and serve. Serves 2.

Dressing Directions:

  1. Combine garlic, shallot, jalapeño, lime juice, vinegar, oil, cayenne, salt, and pepper in blender. Blend until smooth and thickened.
