Tassel Ridge® Baked Potato Salad
Ingredients
- 2 lbs small Yukon gold blue, or Purple Majesty potatoes, washed and dried
- 1 large bunch parsley washed and roughly chopped
- 1 bunch basil washed and roughly chopped
- salt
- white pepper
- 2 Tbsp water
- ½ cup olive oil
- ⅛ tsp sugar
- 4–6 Tbsp red wine vinegar
- 2 shallots peeled and sliced into thin rounds
- 2 Tbsp Dijon mustard
- 1 Tbsp capers
- 1 tsp caper liquid
- 4–6 gherkins chopped into ¼-inch pieces
- 1 Tbsp gherkin liquid

Preheat oven to 350°F. Arrange potatoes in single layer in baking dish. Bake in center of oven 50 minutes, or until fork tender. Meanwhile, combine parsley and basil in a food processor. Season with salt and pepper, to taste. Add water. Blend. With processor running, pour olive oil through top in slow, steady stream. Process until chunky. Taste for seasoning. Add sugar. Pulse to combine. Set aside. Combine vinegar, shallots, mustard, capers, caper liquid, gherkins, and gherkin liquid in large serving bowl. Stir in parsley/basil mixture to make dressing. Remove cooked potatoes from oven. Allow to cool 5 to 10 minutes. Peel half of potatoes. Cut large potatoes into quarters and rest of potatoes in half. Add potatoes to bowl with dressing. Toss. Season lightly with salt and pepper to taste. Serve at room temperature. Serves 4–6.

Wine Recommendation: Tassel Ridge Iowa Marquette Rosé, or if you prefer a slightly sweeter wine, Tassel Ridge Iowa St. Croix Rosé.
This potato salad has lots of flavor and some power from the mustard. It requires a wine with some body. Tassel Ridge Iowa Marquette Rosé is a dry, full-bodied rosé with bright cherry, strawberry, citrus, and peach on the nose and strawberry, raspberry, and cherry on the palate. It is made from Marquette grapes grown in our Mahaska County, Iowa, vineyards. Serve chilled. Tassel Ridge Iowa St. Croix Rosé is a dry rosé with strawberry, raspberry, peach, and nectarine notes and a slightly drying finish. It’s just a bit sweeter than Iowa Marquette Rosé.
