We will bottle another batch of Red, White, & Blue this week and move two additional batches of Red, White, & Blue closer to bottling. We are continuing experimentation with St. Pepin which we plan to bottle as a new varietal. And, we are moving our 2019 Marquette from two barrels to stainless tanks. In the next week or so, we’ll blend the Marquette from the barrels with an equal quantity that has aged in stainless. We are hoping to bottle this wine in the next 2–3 months.
We take continual training very seriously. On Monday, Jonita attended a dry red wine round table at a winery in South-Central Iowa. Winemakers from several wineries get together to taste their wines blind (bottles are kept in brown paper bags) so everyone can learn without embarrassing anyone.
