Making wine is like painting: you spend a lot of time cleaning and preparing surfaces before you paint. When making wine, you spend a lot of time cleaning and preparing equipment before you make wine. This year is no different. We’ll get the presses and the crush pad clean and we’ll clean the harvest equipment including the hopper/elevator, destemmer-crusher, must pump and its prefeed, before connecting hoses and plugging everything in. We will also restock the Winery cellar with wine so that we can continue to make deliveries during harvest. And, we’ll move wine around to optimize our use of tank space so we can accommodate all of the juice we will be processing.
As of Monday, our Brianna was not yet ready and the Edelweiss was really sour, so we probably have a week or so to wait.
