The Crimson Pearl is a small batch from the Tassel Ridge Vineyard. It has some very nice flavors and we are interested to see what we can do with it. It might make an outstanding dessert wine. We will use the Foch (which we purchased from another vineyard) to make Nouveau. We hope to have more Foch from our own vineyards soon. We are doing punch downs on both grapes twice per day. That involves taking a tool made of stainless steel to push down the grape skins that float to the top during fermentation. Since all of the flavors are in the skins, we want to keep them in contact with the juice…and eventually, wine as much as possible.
