Tassel Ridge® Almond Cloud Cookies

- 2 large eggs whites
- 10 oz almond paste
- 1 cup sugar
- ¼ tsp salt
- ¼ tsp almond extract
- ½ cup powdered sugar

Preheat oven to 325°F. Grease cookie sheet. Combine almond paste, sugar, and salt in mixing bowl. Beat until mixture looks like sand. Beat egg whites until soft peaks form. Slowly add egg whites to almond paste mixture, mixing to a smooth paste. Add almond extract. Mix just until incorporated. Spoon by teaspoons onto cookie sheet. Sprinkle tops with powdered sugar. Bake for about 20 minutes or until edges begin to turn golden brown. Remove from oven. Cool on cookie sheet. Makes 2 dozen cookies.
