We had our presses serviced on Monday morning. Our contractor has also almost finished the installation of the new settling tanks for the Winery process water. We will grease all crush pad equipment and clean both presses. The winemaker will continue scouting to make sure that all grape varieties are developing on schedule. This will involve some testing for acidity (TA) and the strength of the acid (pH) as well as sugar levels and general taste of the grapes. We added phosphoric acid to the filter to make sure it stays clean since we won’t use it again until after harvest. We will install the audible bird call on the crush pad this week. For some reason, birds think we run the best hotel in town!
