Tassel Ridge® Chicken Cacciatore

⅓ cup flour
1 tsp salt
1 tsp pepper
3½ lb whole chicken, cut into 8 pieces
3 Tbsp canola oil
10 oz mushrooms
1 onion, diced
1 red bell pepper, seeded and diced
3 cloves garlic, minced
⅔ cup Tassel Ridge Iowa In the Dark
½ cup chicken broth
1 28-oz can diced tomatoes
3 tsp oregano
2 tsp thyme
⅓ cup rough chopped basil

Combine flour, salt, and pepper in bowl. Coat chicken in flour mixture. Heat oil in large pan. Sear chicken for 5 minutes on each side. Remove from pan. Set aside. Add mushrooms, onions, bell pepper, and garlic to pan. Sauté about 2 minutes. Add Tassel Ridge Iowa In the Dark, broth, tomatoes, oregano, and thyme. Bring to a simmer. Add chicken. Simmer 40 minutes, or until chicken is completely cooked. Add basil and serve. Serves 4–8.
