Tassel Ridge® Cranberry-Almond Brie en Croute
- ¼ cup dried cranberries
- 2 Tbsp water
- 1 sheet puff pastry
- 1 8-oz wheel Brie
- ½ cup sliced almonds, reserve some for garnish
Preheat oven to 400°F. Combine dried cranberries and water in small sauce pan. Bring to a boil. Remove from heat. Cool for 5 minutes. While cranberries are cooling, unfold pastry sheet. Place brie in center of pastry. Top with cranberries and sliced almonds. Fold pastry up around brie. Place on cookie sheet. Top with remaining almonds. Bake for about 25 minutes, or until golden brown. Cool about 5 minutes before serving. Serves 6–8.
