Flank Steak with Chimichurri Sauce
Ingredients
- 2 lb flank steak
- 3 cups chimichurri sauce (recipe below)

The night before marinate the steak in the chimichurri. The next day take the steak out of the marinade and place on the grill over medium-high heat. Cook to desired doneness. Remove steak from grill and let rest for about 3 minutes. Slice on a bias.
Chimichuri Sauce
Ingredients
- 2 cups fresh oregano (picked off stem)
- 1 cup fresh parsley (picked of stem)
- ¼ cup red wine vinegar
- 1 ½ cup canola oil
- 4 cloves fresh garlic
- 2 T crushed red pepper

Place all the ingredients into a food processor except for the oil. Turn on the processor and start to mix everything up. Slowly add the oil while it is running. Once all the oil is added place in refrigerator and let stand overnight for best results. For thinner chimichurri add more oil and for thicker add less oil.
