Tassel Ridge® Sweet and Spicy Pineapple Chicken


  • 2 Tbsp dried thyme
  • 2 tsp allspice
  • 1 tsp salt
  • ½ tsp cayenne pepper, or more to taste
  • ½ tsp black pepper
  • 2 Tbsp olive oil
  • 6 boneless, skinless chicken breasts
  • 1 16-oz can crushed pineapple, drained


  1. Preheat oven to 350°F. Combine thyme, allspice, salt, cayenne, black pepper, and olive oil in small bowl. Mix thoroughly. Set aside. Using a sharp knife and slicing horizontally, slice a 1½-inch pocket in each chicken breast, being careful not to slice the breasts all the way through. Spoon one to two tablespoons pineapple into each pocket. Press open sides of pockets closed. Rub spice mix over chicken breasts. Bake 25 to 30 minutes, or until internal temperature reaches 165°F.
