Tassel Ridge® Thai Peanut Sauce Chicken Skewers


  • ½ cup creamy peanut butter
  • 5 Tbsp soy sauce
  • 7 tsp lemon juice
  • 2 Tbsp brown sugar
  • 2 tsp coriander
  • 2 tsp cumin
  • 2 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper
  • 2 tsp minced garlic
  • 1 Tbsp sesame oil
  • 1 onion finely chopped
  • 4 boneless skinless chicken breasts cut into 1-inch pieces
  • 15 10- inch skewers soaked in water


  1. Combine peanut butter, soy sauce, lemon juice, sugar, coriander, cumin, salt, black pepper, cayenne pepper, garlic, and oil in medium bowl. Mix well. Refrigerate ¼ cup peanut mixture. Place chicken and onion in plastic zip bag. Pour remaining peanut mixture over chicken. Refrigerate overnight. Preheat grill. Drain chicken. Thread chicken onto skewers. Grill chicken over medium-high heat until the chicken is cooked through (internal temperature should reach 165°F). Brush with reserved sauce and serve. Serves 5.
