Several tanks have small quantities of wine that we will move to totes for storage during harvest. We will need all of our tank space for harvest. We will reorganize the case goods room to temporarily house several Macro bins that we will be fermenting red wines in. We need to clean our outdoor 4,000 gallon tanks to get them ready for juice and fruit. Our presses and scale will have their preventative maintenance this week and next. And, we will clean all of our harvest equipment. There are lots of little details to attend to.
