This starts with tasting and writing up profiles on wines. We have gotten labels ordered so that we will have them when we start bottling in January.

We are cold stabilizing Brianna and Rockets Glare Rosé® and, in fact, are putting Mother Nature to work by putting the wine in tanks and taking them outside where they sit in the cold air for a week or two. We are equipped to cold stabilize wine indoors but that requires lots of energy to chill the wine down. Putting the wine outdoors for a week or two allows us to cold stabilize the wine without using our chiller.
