In order to make room in our larger tanks for the incoming harvest, we will take a few days to move wine in the tanks to the smallest appropriate tank available. That will take a few days. We will organize the yeast and nutrients that we get from our suppliers and get them put away. Our titrator is made by Mettler-Toledo, and they will come to perform an annual preventative maintenance service. We will finish getting all of our floors pressure washed and squeeky-clean. Our filter won’t be in use for 2–3 months now so we will add ascorbic acid to the solution in the filter modules. And, we are working on getting the exterminator in to perform the final bird control work.
