We continue to ferment Red, White, & Blue® and will be monitoring those fermentations. Checking SO2 and Dissolved Oxygen levels will take some time. We will be bottling St. Pepin as a stand-alone varietal for the first time in a couple of weeks and are working on bench trials of that wine. And, we will be filtering a batch of Red, White, & Blue off of Cream of Tartar. We have lots of little things to do.
