This week, the big task is to bottle our second and final batch of the very popular Star Spangled White for this season. We will also be checking on all barrels, which includes tasting the wine and filling the barrel up to replace wine that has evaporated. This, by the way, is called the “angels share.” We will taste our Frontenac and Petite Pearl and then decide what we are going to do with these wines. The choices are: bottle as a single varietal or blend with other varietals. And, we will check all tanks to make sure that SO2 levels are appropriate.
