On Wednesday, we bottled a batch of Star Spangled White. This past week, we also finished up the fermentation of a batch of Concord that will be used to make Red, White, & Blue®. We will next start cold stabilization of the Concord. In addition to Concord, we are also monitoring fermentations of Catawba and Cranberry. We have a large amount of Edelweiss in our outdoor 4,000 gallon tanks and we will take advantage of a nice day to bring the Edelweiss into indoor tanks sometime soon.
