We bottled Oskyfizzante Red on Tuesday. This is slow work because it must be done on our hand bottling station with five people rinsing and filling bottles, installing a crown cap, wiping the bottles down, and putting them into cartons to warm up. The wine is about 30°F when it is bottled so we don’t lose any of the fizz, but the labels won’t stick to bottles that are much below 65°F. So, we have to wait until the next day to label the bottles.

We will be filtering a batch of Red, White, & Blue® and monitoring fermentations of Concord and Catawba.
