As soon as we receive the replacement pump/motor for our cross-flow filter, we will be able to get ready to bottle wine again. In the meantime, we are fining our batch of Catawba and are taking steps to assure that wine in the tanks is stable. This will involve adding some SO2 to the tanks to protect against microbial spoilage and put a CO2 cap on the top of wines in all tanks.

When we start receiving grapes from the vineyards, we will immediately need yeast and other fermentation supplies so we are making our lists now and getting ready to place orders. Our suppliers incent us to plan ahead because they allow discounts on prices charged if orders are placed early. We are continuing to clean the cellar and are getting the plan for bottling several Oskyfizzante wines organized. Finally, we will have preventative maintenance performed on our two presses in late June or early July to minimize the chances of problems during harvest.
