We started the winemaking process with Edelweiss this week by racking the juice off sediment and starting the fermentation. The Edelweiss was beautiful and the juice had great aromas. We also tested more grape samples to determine which variety we will harvest next and how other grapes varieties are developing.
We processed the LaCrosse and La Crescent on Wednesday of this week and plan to process the Marquette on Friday.
So far, we have not seen any impact of the rain we received on August 19 and 27. That’s good news because the vines could certainly use a drink.
