We are bottling Red, White, & Blue this week. We are also starting to cold stabilize another batch of Red, White, & Blue. We will rack and transfer our Iowa In the Dark and also Iowa St. Pepin. With each wine, we’ll measure the dissolved oxygen and then run Nitrogen through the wine if needed. Two dry red wines are ready to be transferred from barrels to stainless tanks. The next step will be cold stabilization. Every week or so, we test each of our tanks for its SO2 level and we will add some SO2 if necessary. We also top each of our tanks with dry ice to blanket the top of the wine in the tank with CO2.
