We will start work this week to return the cellar to where things were located prior to resurfacing the concrete floors.  The acid in the wine and the cleaning chemicals we use (Potassium Metabisulfate and Citric Acid) help us keep our tanks, hoses, pumps, and other equipment clean however over time and in combination they remove the matrix from the concrete leaving pits in the floor so that we can’t clean properly. We’ve treated the floor with a multi-layer polyurethane coating and now we have to clean up from that process. We had sealed up our full and empty tanks but they all need to be washed down on the outsides. We will also return mobile equipment to its normal positions.

Finally, we will also work on batches of Blackberry Wine and Red, White, & Blue® to get them ready for bottling.
