Tassel Ridge Honey Chicken and Broccoli Stir-Fry

2 tsp cornstarch
1 Tbsp cold water
2 tsp, plus 1 tsp olive oil
1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 clove garlic, minced
3 Tbsp honey
2 Tbsp reduced-sodium soy sauce
⅛ tsp salt
⅛ tsp pepper
1 16-oz pkg frozen broccoli stir-fry vegetable blend 

Combine cornstarch and water, stirring until smooth. Set aside. Heat 2 teaspoons oil in large skillet over medium-high heat. Add chicken and garlic. Cook and stir for 1 minute. Add honey, soy sauce, salt, and pepper. Cook, stirring, until chicken is no longer pink, 2 to 3 minutes (chicken should reach 165°F.). Remove from skillet. Set aside. Add remaining 1 teaspoon to skillet. Add vegetable blend. Stir fry until just tender, 4 to 5 minutes. Return chicken to skillet. Stir in cornstarch mixture. Bring to a boil. Cook, stirring, until thickened, about 1 minute. Serves 4.

Serving Suggestion—Serve with rice or noodles.

Wine Recommendation—Tassel Ridge Iowa Edelweiss 

The sweetness from the honey in this recipe makes a semi-sweet wine a nice complement. Iowa Edelweiss from Tassel Ridge Winery has nice tropical fruit notes with pineapple especially prominent.
