Tassel Ridge® Asian Chicken Sliders
Ingredients
- ⅓ cup sweet chili sauce
- 1½ cups soy sauce
- ¼ cup sesame oil
- 3 cloves garlic
- 2 Tbsp lime juice
- 1 cup orange juice
- ½ bunch cilantro
- ½ cup rice vinegar
- 2 Tbsp fresh ginger, cut into pieces
- 4 boneless, skinless chicken breasts, cut into 3 pieces against the grain and pounded to ¼ inch
- 1 seedless cucumber, julienned
- 2 carrots, julienned
- 1 fresh jalapeño, thinly sliced
- 12 slider buns, toasted

Combine chili sauce, soy sauce, oil, garlic, lime juice, orange juice, cilantro, vinegar, and ginger in food processor and blend until garlic and ginger pieces are small. Place about ¾ of sauce into plastic zipper bag. Add chicken pieces. Refrigerate overnight. Refrigerate remaining sauce in small bowl. Preheat grill. Remove chicken from sauce and discard sauce. Grill for 3 to 4 minutes. Turn and grill another 3 to 4 minutes or until no longer pink (internal temperature should 165°F). While chicken is cooking, combine cucumber, carrots, and jalapeño in bowl with reserved sauce. Place chicken piece on each bun and top with cucumber-carrot mixture. Serves 6.
