Try Baked Sesame Chicken with American Pink Catawba

Tassel Ridge® Baked Sesame Chicken

Ingredients

  • 4 boneless, skinless chicken breasts, cut into 1-inch cubes
  • salt
  • pepper
  • cups panko crumbs
  • canola oil
  • 1 Tbsp sesame oil
  • 2 cloves garlic, minced
  • 2 Tbsp freshly grated ginger
  • ½ tsp sweet chili sauce
  • ¼ tsp red pepper flakes
  • ½ cup chicken stock
  • ¾ cup soy sauce
  • cup honey
  • ¼ cup rice wine vinegar
  • cup brown sugar, packed
  • 2 Tbsp cornstarch
  • 2 Tbsp water
  • ½ cup carrots, thinly sliced
  • 1 cup snap peas
  • 1 cup broccoli florets
  • ½ red bell pepper, sliced
  • sesame seeds, toasted

Instructions

  1. Preheat oven to 350°F. Spray cookie sheet with nonstick cooking spray. Set aside. Season chicken with salt and pepper. Dredge in panko until evenly coated. Place on baking sheet. Drizzle lightly with canola oil. Bake for 20 to 30 minutes, or until cooked through (internal temperature should reach 165°). Meanwhile, combine sesame oil, garlic, ginger, chili sauce, and pepper flakes in saucepan. Stir over medium heat for a few seconds. Quickly add stock, soy sauce, honey, vinegar, and sugar. Stir until mixture comes to a boil. Whisk cornstarch and water together in small bowl. Add to stock mixture, stirring until thickened. Set aside. Heat canola oil in large sauté pan over medium-high heat. Add carrots. Sauté until tender, about 3 minutes. Add snap peas, broccoli florets, and bell pepper. Sauté for about 2 minutes. Add chicken and sauce. Mix until chicken and vegetables are coated well with sauce. Garnish with sesame seeds. Serves 6–8.
