Tassel Ridge® Grilled Chili-Lime Tuna with Avocado Relish

Tuna Ingredients:
2 tsp lime juice
1 jalapeño, seeded and finely diced
2–3 garlic cloves, minced
3 Tbsp soy sauce
2 Tbsp canola oil
1 Tbsp sesame oil
1½ tsp chili powder
¼ tsp cayenne
3 Tbsp cilantro, rough chopped
1 Tbsp honey
1 tsp minced fresh ginger
4 6-oz tuna steaks

Avocado Relish Ingredients:
2 avocados, diced
1 tsp dry mustard
1½ tsp salt
½ tsp garlic powder
2 Tbsp lime juice
¼ cup finely diced red onion
¼ tsp rough chopped fresh cilantro

Combine lime juice, jalapeño, garlic, soy sauce, canola oil, sesame oil, chili powder, cayenne, cilantro, honey, and ginger in medium bowl. Mix well. Add tuna steaks. Marinate in refrigerator for about one-half hour. Meanwhile, preheat grill to medium-high. Combine avocado, dry mustard, salt, garlic powder, lime juice, onion, and cilantro in another bowl. Mix well. Cover well with plastic wrap. Set aside. Remove tuna from marinade. Grill tuna for 3 minutes. While grilling, brush tuna with marinade. Turn and grill another 3 minutes. Tuna will be rare in middle but cooked on outside. Be careful not to overcook or tuna will become dry and tough. Remove tuna from grill. Top with avocado relish. Serves 4.

Serving Suggestion—Serve with Chinese noodles or rice.

Wine Recommendation: Tassel Ridge 2013 Iowa St. Croix Rosé 

This outstanding recipe for tuna has lots of flavor and it cries out for a wine with some body, but not a wine that will overwhelm the tuna itself. 2013 Iowa St. Croix Rosé is a dry rosé with strawberry, raspberry, peach, and nectarine notes and a slightly drying finish. It is best when served chilled.
