Tassel Ridge® Grilled Salmon Salad

Ingredients

  • 2 6-oz salmon filets skin removed
  • ¼ cup olive oil
  • ¼ tsp salt
  • ½ tsp black pepper
  • 2 cups fresh baby spinach
  • 2 cups chopped romaine lettuce
  • 1 cup orange segments
  • ½ apple, cored and thinly sliced
  • ¼ red onion, sliced
  • ¼ cup crumbled blue cheese
  • ¼ cup pistachios
  • ½ cup raspberry vinaigrette

Instructions

  1. Preheat grill. Coat salmon with oil. Sprinkle with salt and pepper. Grill 5 to 10 minutes on each side, or to desired doneness. Meanwhile, combine spinach and romaine in bowl. Divide lettuce mixture between two plates. Add orange segments, apple slices, onion slices, blue cheese, and pistachios. Drizzle with vinaigrette. Top each salad with salmon filet. Serves 2.
