Tassel Ridge Honey Chicken and Broccoli Stir-Fry
- 2 tsp cornstarch
- 1 Tbsp cold water
- 2 tsp plus 1 tsp olive oil
- 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
- 1 clove garlic minced
- 3 Tbsp honey
- 2 Tbsp reduced-sodium soy sauce
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 16- oz pkg frozen broccoli stir-fry vegetable blend
Combine cornstarch and water, stirring until smooth. Set aside. Heat 2 teaspoons oil in large skillet over medium-high heat. Add chicken and garlic. Cook and stir for 1 minute. Add honey, soy sauce, salt, and pepper. Cook, stirring, until chicken is no longer pink, 2 to 3 minutes (chicken should reach 165°F.). Remove from skillet. Set aside. Add remaining 1 teaspoon to skillet. Add vegetable blend. Stir fry until just tender, 4 to 5 minutes. Return chicken to skillet. Stir in cornstarch mixture. Bring to a boil. Cook, stirring, until thickened, about 1 minute. Serves 4.
