Tassel Ridge® Oskyfizzante® Pink Strawberry and Cream Cake
- 1 box white cake mix
- water, as called for on cake mix box
- vegetable oil, as called for on cake mix box
- eggs, as called for on cake mix box
- ⅓ cup Tassel Ridge Oskyfizzante Pink
- 1½ cups + 1½ cups heavy whipping cream
- 1 3.4-oz box vanilla instant pudding
- 2 Tbsp granulated sugar
- 3 sticks (¾ lb) butter, softened
- 2 tsp vanilla extract
- 4½ cups powdered sugar
- 1 lb dark chocolate chips
- 1½ lbs fresh strawberries, sliced
Preheat oven to 350°F. Prepare cake batter according to package directions. Add Tassel Ridge Oskyfizzante Pink. Mix well. Pour batter, splitting evenly, into two 8-inch greased cake pans. Bake according to package directions. Remove from pans. Place on wire rack(s). Cool completely. Meanwhile make Cream, Frosting, and Chocolate Glaze.
Pour 1½ cups cream into bowl. Beat until soft peaks form. Add pudding and granulated sugar. Continue to beat until stiff peaks form. Set aside.
Add butter to another bowl. Beat until smooth. Add vanilla extract. Continue beating while slowly adding powdered sugar until sugar is well-combined and frosting is smooth. Set aside.
Pour remaining 1½ cups cream into sauce pan. Heat until just warm, do not allow to simmer or boil. Put chocolate chips in medium bowl. Pour warm cream over chocolate chips. Cover. Let sit for about 5 minutes. Whisk chocolate and cream together. Set aside.
Top one cake with Cream and strawberries. Place second cake, upside down, on top. Cover entire cake with thin layer of Frosting. Let cake sit for 30 minutes, allowing Frosting to harden. Place cake on wire rack over cookie sheet. Pour slightly warm Chocolate Glaze over cake, covering entire cake. Cool completely before serving. Serves 10.
