Elegant Prime Rib with and an Elegant Iowa Wine!

Tassel Ridge Roasted Prime Rib
Ingredients
- ¼ cup salt
- 3 Tbsp pepper
- 1½ Tbsp rosemary
- 1 Tbsp thyme
- 1 Tbsp garlic powder
- 1 Tbsp onion powder
- 2 tsp oregano
- 3 lb prime rib roast
- 10 garlic cloves
Instructions

Preheat oven to 450°F. Combine salt, pepper, rosemary, thyme, garlic powder, onion powder, and oregano in bowl, mix well. Set aside. Cut ten small “x’s” in top of roast, making sure to get to center of roast. Place 1 garlic clove into each “x,” making sure to get garlic into center of roast. Rub outside of roast generously with spice mixture. Roast at 450°F for about 45 minutes. Reduce heat to 350°F. Continue to roast until internal temperature reaches 130–135°F for medium rare. Remove from oven. Let rest for about 25 minutes before slicing. Serves 6–8.
