Tassel Ridge® Steak au Poivre Vert
Ingredients
- 4 5-oz beef filet mignons, 1-1½ thick
- ¼ cup dry white wine
- juice from one lemon
- 4 Tbsp Cognac or brandy (see Ingredient Notes below)
- 2–3 dashes Worcestershire sauce
- 1 tsp chopped fresh chives
- 2 Tbsp chopped fresh parsley
- 3 Tbsp green peppercorns in brine, drained (see Ingredient Notes below)
- salt
- 3 Tbsp heavy cream

Preheat oven to 225°F with oven-proof plate in the oven. Trim visible fat off steaks. Cut steaks in half across the grain to make 8 medallions. Set aside. Combine wine, lemon juice, Cognac, Worcestershire sauce, chives, parsley, and peppercorns in 2-cup measuring cup. Set aside. Heat skillet over medium-high heat. Sprinkle salt in skillet. Add steaks. Sear on both sides. Remove steaks from skillet to warmed plate. Return plate to oven. Do not clean skillet. Add wine mixture to skillet. Reduce by about half, while smashing peppercorns, more or less to taste (the more you smash, the spicier the sauce). Add cream. Reduce again by about half. Remove steaks from oven. Place two steak medallions on each plate. Spoon sauce over steaks. Serves 4.

Ingredient Notes:
Cognac: If you don’t have Cognac, save some money, and buy a bottle of decent brandy. If you do buy Cognac to use for cooking, get VS (Very Smooth). Save the VSOP (Very Special Old Pale) for drinking after dinner!
Green Peppercorns in Brine: You may be able to find green peppercorns in brine in cans in grocery stores or specialty shops locally. If they are not available, we suggest Moulin Madagascar Green Peppercorns in Brine which are usually available in cans online.
