Strawberries, Crème Anglaise, and Fizzy Pink Wine . . .

Strawberries with Crème Anglaise make an elegant dessert, and Tassel Ridge Oskyfizzante Pink, a sweet, refreshing, fruity, fizzy wine with tropical fruit aromas, make dessert a celebration!

Tassel Ridge® Strawberries with Crème Anglaise

Ingredients

  • 2 cups heavy cream, or 1 cup heavy cream and 1 cup whole milk
  • 4 tsp vanilla extract
  • ½ cup sugar
  • 4 egg whites
  • 4 egg yolks
  • 4–6 cups strawberries, washed, hulled, and quartered or halved depending on size

Instructions

  1. Heat cream and vanilla in heavy saucepan over medium heat until bubbles form at edges. Do not let mixture boil. While cream is heating, whisk egg yolks and sugar together in large bowl until smooth. Slowly pour ½ cup of hot cream mixture into egg yolk mixture, whisking constantly. Gradually add egg yolk mixture back to remaining cream into saucepan, whisking constantly. Continue to cook, stirring constantly, until mixture coats back of a spoon. Remove from heat and whisk to help cool to warm or room temperature. Once cooled and thickened slightly, drizzle over strawberries. Or, refrigerate sauce until ready to serve and drizzle over strawberries. Serves 4–6.
