Strawberries, Crème Anglaise, and Fizzy Pink Wine

Tassel Ridge® Strawberries with Crème Anglaise


  • 2 cups heavy cream, or 1 cup heavy cream and 1 cup whole milk
  • 4 tsp vanilla extract
  • ½ cup sugar
  • 4 egg yolks
  • 4–6 cups strawberries, washed, hulled, and quartered or halved depending on size


  1. Heat cream, vanilla, sugar, and egg yolks in heavy saucepan until bubblies form at edges. Do not let mixture boil. While cream is heating, whisk together eggs and sugar until smooth. Slowly pour ½ cup of hot cream into egg yolks, whisking constantly. Gradually add egg yolk mixture back to remaining cream, whisking constantly. Continue to cook, stirring constantly, until mixture coats back of a spoon. Refrigerate until ready to serve, up to 2 days. Serves 4–6.
