Pair Spring with Rosé and Lighter Dinners!
This Chinese Chicken Salad is a light, flavorful dinner for a warm spring evening, and Tassel Ridge Iowa St. Croix Rosé is the perfect pairing for the Asian inspired flavors.
Tassel Ridge® Chinese Chicken Salad
Ingredients
- ¼ cup soy sauce
- ¼ cup tahini, well stirred
- ¼ cup rice vinegar
- 1 tsp minced garlic
- 1 Tbsp minced ginger
- 1½ tsp salt
- ½ tsp black pepper
- 1 Tbsp sesame oil
- ½ cup canola oil
- 2 tsp black sesame seeds
- 5 oz shredded cabbage
- 2 oz snow peas, trimmed and thinly sliced lengthwise
- 1 carrot, julienned
- ½ medium cucumber, peeled, seeded, and chopped into bite-size pieces
- 2 green onions, sliced on sharp angle
- 1 Tbsp fresh cilantro
- 2 cups shredded cooked chicken
- 1 11-oz can of mandarin oranges, drained
- ¼ cup toasted slivered almonds
Instructions

Combine soy sauce, tahini, vinegar, garlic, ginger, salt, and pepper in blender. Blend until smooth. Slowly drizzle in sesame oil and canola oil. Blend until mixture begins to thicken. Turn off blender. Add sesame seeds. Pulse twice. Set mixture aside. Combine cabbage, snow peas, carrots, cucumbers, green onions, and cilantro in large bowl. Drizzle with soy sauce mixture. Toss until mixed. Split evenly between two plates. Top with chicken, oranges, and almonds. Serves 2.
